Yuzu Gingerbread Cookies (Vegan, Gluten-free)

13-15 7cm hight gingerbread man cookies


(Dry) 110-120g Brown Rice Flour

(Dry) 1/4 tsp Bicarbonate Soda

(Dry) 1/4 tsp Sea Salt

(Wet) 50g Coconut Oil

>Icing (Optional): 50g Icing Sugar & 1-2 tsps Water


1. Place soften Coconut Oil, Carwari Organic Yuzu Spread, Carwari Organic Agave Nectar and Carwari Organic Ginger Paste in a large bowl and mix.

2. Add rice flour and stir to combine and using your hands, bring together to form a dough. Rest the dough for 10-15 minutes.

3. Preheat oven to 180 degrees.

4. Roll the dough between two parchment sheets to 5-7mm thick. Remove the top parchment sheet and cut out shapes from it. Re-rolling the dough scraps and repeat the process. Transfer to non-stick baking sheet on the baking tray.

5. Bake them in the preheated oven for 10 minutes, pulling the biscuits out just before they start to brown.

7. Allow the biscuits to cool for 20−30 minutes. Then serve as it is or decorate with icing.
