Yuzu & Pepitas Black Nougat (Vegan, Gluten-free)


1/2 cup Raw Caster Sugar

20ml Water

1/8 tsp Bicarbonate Soda


  1. Line a tray with parchment paper.

  2. Place sugar, water and Extra Virgin Sesame Oil in a saucepan and simmer with low heat for 10 to 15 minutes. Shake it occasionally. Do not stir much.

  3. Add Yuzu Spread and Yuzu Kosho and quickly let them dissolve into the mixture then remove from heat.

  4. Add bicarbonate soda, Dry Roasted Pepitas and Black Sesame Flour and quickly stir.

  5. Immediately pour the mixture onto the parchment paper lined tray.

  6. Cool completely or chill in freezer.
